3-4 lb pork loin roast, well trimmed
salt and pepper
4-6 apples
4-6 sweet potatoes
1/4 cup apple juice
3 tablespoons brown sugar
Rub roast with salt and pepper. Place whole
potatoes and
quartered apples in bottom of Crock-Pot. Place
roast on
top of "rack." Combine apple juice and brown
sugar. Spoon
over surface of roast, moistening well. Cover
and cook on
Low setting for 5-7 hours.
