I have this recipe for chocolate coffee mousse, but haven't ever made it. It looks good, though.
8 oz milk chocolate chips
10 Tb coffee
2 cups heavy whipping cream
1/2 cup sugar
Put the chocolate chips and coffee in a small saucepan and heat over medium-low heat. Stir frequently until the mixture is smooth. Remove from heat and set aside. Beat the cream with an electric mixer until it starts to thicken. Slowly add the sugar, 1 Tb at the time (it will be 8 Tb total). Beat until stiff peaks form. Pour the chocolate mixture over the whipping cream and blend on low speed until thoroughly mixed. Spoon mixture into 6-8 ramekins and chill.
Tip - If you put the mixing bowl in the freezer for about 5 minutes before beating, the whipping cream will thicken a bit more quickly.
